Is it STILL summer? Might as well enjoy some peaches while we sweat our peaches off.

Happy Friday, all! I worked only four days this week but they’ve felt LONG. I’m putting away our trucks on Thursday nights and the schedule shift has proven rather interesting, but difficult to adjust to. Usually by 8pm I’m lying in bed, but now I’m hauling boxes to and fro and climbing atop ladders hoping I don’t topple over and crack my cranium.

To shift from workweek to weekend, and to observe National Rum Day on Sunday, why not grab a quick, refreshing Island Peach Rum Spritz? This simple cocktail is modeled off the every-famous aperitif we all know and love, but with a tropical twist. Peach puree, coconut rum, and prosecco intertwine in this bubbly and happy, low-key sip. Perfect for porch or poolside sipping as these long August days roll forth.

Island Vibes

I near always use peach puree in my cocktails (unless I’m using liqueur) and the fastest, painless method of achieving a smooth blend is by using canned peaches. No skins, no peeling, no problem.

Tip: ALWAYS buy peaches in water. Usually they’re sweetened with Splenda or similar, but are much less heavy and syrupy. We drain most of the liquid out anyway so it’s not too marred by the sugar.

Pop those drained peaches into your food processor or high speed blender and whiz until smooth. Any leftover puree will keep well for up to a week in the fridge.

Snag your favorite spunky glass from your bar cart. Use a long cocktail spoon to stir some of the puree with coconut rum. Add ice, then pour over a generous heap of prosecco. Top off with coconut or pineapple sparkling water. The final garnish? Peach slices, and maybe some mini basil leaves.

Yep, that’s it. The loveliest 5 minute cocktail to celebrate your Friday.

My recommended accompaniments? A light and refreshing Tomato, Peach, and Cucumber Feta Salad or a zippy Hot Honey Caprese Whipped Ricotta bowl keeps the nibbler happy while not overpowering the drink. A simple cheeseboard with prosciutto, buttery crackers, and sharp cheddar works great too.

Ingredients
  

  • 1 can peaches in water, drained
  • 2 oz coconut rum
  • 3 oz prosecco
  • 2 oz pineapple or coconut sparkling water
  • peach slices, for garnish

Instructions
 

  • For the peach puree: Toss the drained peaches into a food processor or high speed blender. Puree until smooth. Leftover puree will keep well in the fridge for up to a week.
  • In your favorite glass, combine 2 oz peach puree with the coconut rum. Stir, then fill with ice. Pour over the prosecco, then top with sparkling water. Garnish with peach slices.
