I got sunshine on a cloudy day, and it’s this smoothie.

Happy Friday, kids! It’s actually pretty overcast today, which bugs me since I think I got spoiled by the gorgeous, mild, bright afternoons we’ve enjoyed this whole week. So, why not share a happy, vividly-hued smoothie to wrap up our week?
I’ve shared one smoothie on the site before, my Peanut Butter Fudge Protein Shake, a riff on my favorite chocolate peanut butter concoction I used to drink after every long run. I lived for that smoothie every week.
Perhaps this beauty will fill that gap for you, too.
Our Strawberry Coconut Cloud Smoothie is inspired by the apparently good but overwhelmingly costly Erewhon skin glaze shake doodad that I’ve seen floating around the Pinterest boards. My version doesn’t contain any weird sea goop or whatever, but is more peasant-friendly and no frills to whip up when the smoothie cravings shake.
Yes, I’m calling myself a peasant.
The special touch to our drink is the pretty patterns in the glass. This isn’t hard to accomplish, and yields a unique result every time. Whether you decorate your drink or not, the flavors of coconut and sweet berry will surely please you if you yearn for springtime refreshment.

Smooth(ie) Operator
As with any smoothie, you’re pretty much just dumping and going. That sounds gross.
First, if you want the nice pattern in your cup, open up that container of coconut yogurt you’re going to use in the smoothie anyway. Grab a little spoonful and brush around the glass with the bottom of the spoon.
I also added a further step of pureeing a few strawberries (about 1 cup should do), straining out the seeds, and pouring into the bottom of the glass. When you pour the smoothie, the ripples reach up and create a beautiful symphony of swirls.

This is not required, but it’s fun.
Now, to the drink. In your high-speed blender, throw in a frozen banana, frozen strawberries, the coconut yogurt (FYI, you can use dairy-based coconut flavored yogurt or nondairy coconut milk-based yogurt), vanilla protein powder if you’d like, honey, vanilla extract, coconut cream, and milk of your choice. I like soy or whole milk.
Blend until smooth and luscious. If too thick, add a few more tablespoons of milk and reblend until you get the texture you desire. I like my smoothies thick, so 1 cup total of the extra milk does the trick for me.
That’s it, that’s all. Enjoy your sip, that you didn’t pay out the ass for, and enjoy your weekend!

Fresh Strawberry Mango Lemonade
Strawberry White Hot Chocolate

Ingredients
- 1 frozen banana
- 1 cup frozen strawberries
- 1/2 cup coconut yogurt
- 1 scoop vanilla protein powder (optional)
- 1 tbsp honey
- 1 tsp vanilla extract
- 1/2 cup coconut cream
- 1 1/4 – 1 1/2 cups milk of choice
- fresh strawberries, for garnish
Instructions
- With a spoon, swipe a little bit of the coconut yogurt on the inside of each glass.
- In a blender, combine all ingredients except the fresh strawberries, starting with 1 1/4 cup of the milk of your choice. Blend until smooth and creamy. If you desire a thinner smoothie, add a couple tablespoons more milk and blend again until you achieve the right texture.
- Pour into your favorite smoothie glass and top with a fresh strawberry.
