In a pickle? Here’s the dill: Poolside Pickle Snack Mix.

Happy Tuesday, all! My various Chex mix recipes are proof that you needn’t a fanciful dish to get excited over. Often, the simplest bites give me the greatest joy.
In a couple weeks I’ll be hosting a little pool party, and this munch blend will surely make the menu. A bowl of crunchy carbs and a briny, buttery coating will entertain the tastebuds of your guests all afternoon, and I assure you, there’ll be nothing but a stray dried dill sprig left in the bowl.
What’s not to love? We’ve got Chex cereal, pretzels, white cheddar Goldfish, and toasty Cheez-its, a banging flavor squad if you ask me. 30 minutes and the batch is ready for you. No fuss is the name of the summer game.

Your Fill of Dill
First, make your dilly sauce. Microwave a stick of butter until melted, and let it cool a minute or two so your butterfingers don’t turn into burnt butterfingers.

Then, whisk in a good bit of dill pickle brine, dried dill (never enough dill), parsley, and garlic and onion powders. If you used unsalted butter, add a pinch of kosher salt as well.

Haul out your biggest mixing bowl and measure in your snacky fixings, then dump the sauce all over the munchies. Toss with a big wooden spoon or clean fingers for a couple minutes until everything is thoroughly coated. Take your time here, make sure every crevice is infused.

Line two large baking sheets with parchment and divide the snack mix between them. Bake at 350 degrees for 15-20 minutes, tossing the mixes around after about 10. Watch very closely, this crap will scorch like my left buttcheek after I visited the beach last week.
TMI, yeah yeah, get over it.

Cool the mix a bit, then dump into a bowl and serve!

Leftovers? Cover the mix tightly and store at room temperature for up to 5 days, maybe a week if the humidity stays away. Don’t refrigerate or freeze, it’ll taste like shit.
Substitutions? Pretzel sticks, pickle chips, Saltines, those weird bready round things, white cheddar Cheez-its…Lots of options! Just be mindful that baking time could change depending on the structure of your choice crunches.

Cheesy Buffalo Ranch Pretzel Snack Mix
Brown Butter Stuffing Snack Mix

Ingredients
- 1 stick butter, melted and cooled slightly
- 1/3 cup dill pickle brine
- 1 tbsp dried dill
- 2 tsp dried parsley
- 1 tsp garlic powder
- 1 tsp onion powder
- 3 cups mini pretzel twists
- 2 cups corn Chex
- 1 1/2 cups white cheddar Goldfish
- 1 1/2 cups Cheez-its (I like "extra toasty")
Instructions
- Preheat oven to 350 degrees. Line two large baking sheets with parchment
- Whisk together the melted butter, pickle brine, dill, parsley, garlic, and onion powders, as well as a pinch of black pepper.
- In a very large bowl, measure in the pretzels, Chex, Goldfish, and Cheez Its. Pour in the spiced butter and mix for 2-3 minutes with a large wooden spoon or you CLEAN hands, until very well combined.
- Divide the snack mix onto the prepared baking sheets, spreading the components in an even layer. Bake 15-20 minutes, turning once halfway through, until lightly golden in spots and crisp. Let cool on the baking sheets – the mix will continue to crisp up.
- When fully cool, pour into a large serving platter and dig in!
