Happy Friday, folks! Boy, do I have an easy one for you today, yessir. I had about 30 minutes to photograph this recipe on Tuesday since I flew from work to gym to appointment, with lunch in between, so I needed something fast and tasty to share with ya’ll.

This one sure fits those parameters!

I am a total sucker for lemonades this time of year and into summer – I seem to put out a new variety around this time, and today’s Frozen Coconut Lemonade couldn’t be more effortless and tastier. I slurped this down like it was my death row drink. Frosty, refreshing, and equal parts tangy and sweet. Just a few ingredients to whip up and pour into your favorite glass before marching out to the pool and enjoying the sun.

Sounds like a weekend plan to me!

Go Coconuts

Not much to narrate here because this drink is seamless. Throw shit in a blender and go!

First, though, I love a good rimmed glass, and this time I dabbed on some toasted coconut flakes. The flakes are usually a bit large to stick properly to the rim, so grab a handful and chop them up with a sharp knife.

Brush the rim of your glasses generously with honey, then swirl into the flakes. Gently press additional flakes to fill in the gaps. Not the most precise piece of artistry, but trust me, it’ll still look pretty!

For the drink itself, be sure you buy a can of coconut cream specifically (I bought Trader Joes brand) or full fat coconut milk. Reduced fat or, God forbid the carton crap, won’t work too well in this since you need the cream to achieve the desired taste and texture. If you buy the milk, pop the can in the fridge overnight to separate the cream from the milk.

Now, whiz it up! Combine fresh squeezed lemon juice (please use fresh, it makes a HUGE difference in taste!), sugar, the coconut cream, water, and ice. Blitz until smooth.

Pour into your prepared glasses and top with a lemon wedge, just for funsies.

A cooling treat for a hot afternoon.

Ingredients
  

  • 2 tbsp honey
  • 1/4 cup toasted coconut flakes, finely chopped
  • 1/2 cup fresh squeezed lemon juice (4-5 large lemons)
  • 1/2 cup sugar
  • 1 cup coconut cream
  • 1/2 cup cold water
  • 2 cups ice

Instructions
 

  • Generously brush the rim of your glasses with honey. Spread the coconut flakes onto a shallow plate and dip/swirl the glasses into the flakes, shaking off excess. You will likely need to gently press the flakes onto the rim to get them to stick. It won't be perfect and that's okay!
  • In the bowl of a blender, combine the lemon juice, sugar, coconut cream, water, and ice. Blitz until smooth and creamy. Divide into 4 smaller glasses or 2 large glasses and top with a lemon wedge.

Notes

*Booze it up!: A shot of tequila or vanilla vodka per serving (so, 4-8 ounces total depending on how boozy you want it) would add a nice adult touch to this drink!
*Coconut cream: You can separate the cream from the milk in a can of coconut milk by refrigerating the can overnight. Using some coconut milk in the slushie would also be very tasty!
