1/2cupfresh squeezed lemon juice (4-5 large lemons)
1/2cupsugar
1cupcoconut cream
1/2cupcold water
2cupsice
Instructions
Generously brush the rim of your glasses with honey. Spread the coconut flakes onto a shallow plate and dip/swirl the glasses into the flakes, shaking off excess. You will likely need to gently press the flakes onto the rim to get them to stick. It won't be perfect and that's okay!
In the bowl of a blender, combine the lemon juice, sugar, coconut cream, water, and ice. Blitz until smooth and creamy. Divide into 4 smaller glasses or 2 large glasses and top with a lemon wedge.
Notes
*Booze it up!: A shot of tequila or vanilla vodka per serving (so, 4-8 ounces total depending on how boozy you want it) would add a nice adult touch to this drink!*Coconut cream: You can separate the cream from the milk in a can of coconut milk by refrigerating the can overnight. Using some coconut milk in the slushie would also be very tasty!
