A warm and happy drink for the midday work slog.

Happy Friday, peeps! We’re thawing out our chilly hands with a Cookie Butter Chai Latte this morning. Though our temps have crept back up a little, our days are still proving lovely and such definitely justifies a mug of something cozy to defrost the soul from a long week.

This little latte involves a lightly sweetened chai-infused milk (which you can choose to keep unsweetened if you wish!) poured over espresso and a dab of cookie butter for that toasty bakery flavor. My adoration for Biscoff is no secret around here, or if it was it isn’t anymore, and combining a spoonful with my morning elixir feels like a swell way to welcome to weekend.

Our drink is easy peasy, so let’s get gettin’.

Bisc-Off With the Workweek!

Drag a little saucepan from your cabinet and pour in your choice milk. I prefer whole or soy depending on the vibes, but you can use whatever milk you wish, keeping in mind that the flavor interactions between the components will vary depending on what you use.

Heat you milk along with some brown sugar until the milk is steaming, then throw in a couple chai tea bags – use your favorite brand! – and steep for 10 minutes. You don’t have to sweeten the milk if you don’t want to, by the way. I usually don’t because the cookie butter is enough for me.

Once the bags are infused, discard and get on with the rest of the latte.

Scoop some cookie butter into a mug and microwave until melted. Pull a couple shots or espresso overtop and stir to combine, then pour in the milk.

Garnish with lots of whipped cream and crumbled Lotus cookies, or whatever cookie butter-adjacent brand you use. I also serve mine with a whole cookie because who wouldn’t want a little dipper in their drink? Well, my mom wouldn’t. But she’s weird.

A sweet and cozy cold-weather pick me up for long winter workdays.

Ingredients
  

  • 2 cups whole milk, or milk of choice
  • 2 chai tea bags
  • 2-3 tbsp brown sugar (optional)
  • 2 tbsp cookie butter
  • 4 oz espresso, divided
  • whipped cream and crushed/whole Lotus cookies, for garnish

Instructions
 

  • In a small saucepan, heat the milk until steaming – do not boil or else your milk will scald. Move the pan off the heat and add the chai tea bags and sugar (if using). Steep 10 minutes. Discard the tea bags.
  • Melt the cookie butter in the microwave for 20-30 seconds until smooth, then divide between two mugs. Pull two shots of espresso for each mug and stir with the cookie butter. Pour the chai milk into both cups.
  • Garnish with whipped cream, crumbled Lotus cookies, and a whole Lotus cookie, as desired.
