Peaches, peaches, everywhere, possibly in your underwear. I’m not going any further with that joke.
For your late summer parties, this incredible Whipped Feta Peach Garlic Bread is here to pretty up your table and delight your tastebuds. This is probably my favorite appetizer creation so far. The sweetness of the fruit paired with the garlic butter spread over grilled bread is unbelievably satisfying. I gave half a batch to my boss and he ate it in the span of 8 hours. It’s addicting.
Peach season will end eventually, but for now, I’m rolling out what I can before these plump stone fruits peel away from the shelves in favor of apples, pears, and the like. Peaches are essential summer accessories, like flipflops and sunhats. Carry an armful from the stores and you’re an ambassador of the season. I seem to be buying out the shelves myself.
Almost no one can say no to cheesy garlic bread, and the usual formula – the one you like to dip in pasta sauce – matured into a lighter-palate version with honey whipped feta and a sweet vinaigrette drizzled over peach slices. You’ll be hooked, and so will anyone who tries it.
Feta Getta
Listen, I don’t know how all these buffoons manage a fluffy whipped feta with Greek yogurt. I never achieve the correct texture, it always becomes runny and awkward. So I played around, and eventually found that whipped cream cheese is the way to go here. Regular works fine, too, but whipped adds a special smoothness that makes it worth snatching from the store.
All you need to do is throw a block of feta, the whipped cream cheese, and honey in a food processor and whiz until smooth. You probably will need to push the feta down the sides of the bowl a few times to ensure everything is properly pureed.
Peach Grillz
Grilled bread is legit a new favorite of mine. For some reason I never thought much of it, but now I think much of it. Char marks elevate typical toast. You heard it here probably not first, but you heard it here now.
For the garlic bread, I mixed together butter, garlic (INNOVATIVE), and some fresh chopped oregano. Cut up a sourdough or regular baguette into big slabs, brush the butter over the cut parts, and grill a few minutes until crisped. No grill or grill pan? No sweat. Use the broiler. Keep a close eye on the pieces so you don’t end up with ash.
Finally, the peaches. Mix up a lovely little vinaigrette of olive oil, honey, white balsamic vinegar (or cider vinegar), oregano, salt, and pepper. Toss a little bit over peach slices and save the rest for drizzling.
To assemble, swipe the feta generously over each piece of bread and top with a few peach slices. Spoon a bit more vinaigrette over each. I also love a hit of fresh basil because, well, tis the season.
Entertaining, or just enjoying a casual light supper, this bread is pretty and pretty fucking good, too. Try it out with some blackened salmon if you need something more substantial to fill your tummy!

Ingredients
- 8 oz block feta cheese
- 1/2 cup whipped cream cheese
- 2 tbsp honey
- 2 large peaches, sliced
- 1/4 cup extra virgin olive oil
- 2 tbsp white balsamic vinegar
- 1 tbsp honey
- 2 tbsp fresh oregano, chopped
- 1 loaf sourdough or French baguette, or ciabatta
- 4 tbsp butter, softened
- 2 cloves garlic, minced
Instructions
- To make the whipped feta: combine the feta, cream cheese, and honey in a food processor. Blitz until very creamy and smooth, about 2-3 minutes, scraping down the sides of the bowl as needed.
- Add the peach slices to a medium sized bowl. Whisk together the olive oil, white balsamic vinegar, honey, 1 tablespoon of fresh oregano, and a pinch each of salt and pepper. Taste to adjust as needed. Add a couple spoonfuls to the peaches and toss gently to coat.
- Heat your grill or grill pan to medium, or broiler to high. Stir the butter, garlic, and remaining tablespoon of oregano. Slice your baguette into 6-8 pieces and brush the butter on the cut side. Grill or toast butter-side down (or up, under the broiler) for 2-3 minutes until golden and charred.
- Swirl the whipped feta onto each piece of bread. Arrange the peaches on top. Drizzle with extra vinaigrette and serve with fresh basil, as desired.
