Ever since my Spicy Dill Pickle Margarita a couple weeks back, I’ve been feeling very experimental with my boozy endeavors. As much as I love a classic, sweeter drink (or something cozy like an old fashioned), playing with savory flavors and alcohol is actually very satisfying and has offered up some fun new combinations I feel are worthy to share.

Our Tomato Basil Martini kinda just came to me one day. I’d be poetic and say it came to me in a dream, but I probably was just zoned out on my couch and the intrusive thought wafted in like some sort of brilliant fart.

He’s simple and tasty, a break if you’ve been downing peach tea all day and need something with a bit of peppery sass. It’s a classy, minimal ingredient drink that’ll tide you through the rest of these balls hot days until we can whip out the espresso martinis and pumpkin beers.

Tomato Mate

The one sort of different component to this drink that you’ll need to source is carrot juice. I buy mine at Trader Joe’s. I had some leftover from a batch of Garden Party Margaritas and I love the earthy undertone it gives to this martini.

In a shaker, muddle a few cherry tomatoes with basil leaves, the carrot juice, white balsamic vinegar, and a pinch of black pepper until the tomatoes pop and are juicy. Add some vodka and ice and shake until icy cold.

Strain into your favorite coupe glass and finish with a splash of sparkling water. Stab a few cherry tomatoes onto a cocktail pick and lay across the top of the glass, and add a big basil leave to pretty it up further. Yep, that’s all!

What would I serve this with? Pizza comes to mind, perhaps my peach garlic butter pizza or the pizza night chopped salad, even. Or, just take your glass to the porch and watch the rain drip down on a weekend evening. Sounds idyllic to me.

Ingredients
  

  • 4 cherry tomatoes
  • 3-4 fresh basil leaves
  • 1/2 oz carrot juice
  • 1/4 oz white balsamic vinegar
  • dash black pepper
  • 2 oz vodka
  • sparkling water, to top, if desired

Instructions
 

  • In a shaker, muddle the tomatoes, basil, white balsamic vinegar, carrot juice, and black pepper until the tomatoes are nice and mushed and the basil crushed. Add the vodka. Fill with ice and shake until cold. Strain into a martini glass and top with sparkling water, if desired.
  • Garnish with 2-3 cherry tomatoes poked onto a cocktail pick.
