AYYYY IT’S FRIDAY! FRIYAY! WOO!

This week fizzed by. Unlike last week, which seemed like a slow trickle: probably because work was slow as hell and nothing interesting in general really happened. But now, it’s suddenly Friday, and the weekend lies before us like the temptress it is.

So, why not give into the call of Happy Hour with a homemade Peach Mojito? A seriously simple and refreshing drink to enjoy with the gals or the pals, or alone, and yet another great method of using up those ten fresh peaches I bought this week and keep reminding you that I bought every goddamn recipe I’ve shared since Monday.

Cocktail Fridays are also a quick writeup, so I’ll leave you to your druthers and stop restraining you from the how-to. Enjoy, friends!

Mojit-YO

Along with your minty friend, I love using basil in mojitos for an added touch of freshness. This, of course, is optional, but peach and basil are just such a fine pair I can’t say no to reuniting them whenever I’m able.

Grab your cocktail shaker and muddle the mint and basil with lime juice, honey, and peach puree. The recipe calls for you to peel (and pit) one large peach to make the puree, but a can of peaches works just as well and yields more than one serving easily in case you have multiple drinks to mix.

Add some silver rum and ice. Shake until nice and cold, then pour or strain into your fanciest cocktail glass. Even if that’s just a paper cup in your pantry. I like keeping the mint and basil leaves in my drink so I usually don’t strain, but if you prefer a smoother sip, go ahead and block those babies out.

Top off with sparkling water and you’ve got yourself the easiest treat imaginable!

Light, bright, and sweet, a lovely porch sip for hot summer days.

Ingredients
  

  • 2 tbsp peach puree (from 1 large peach, peeled)
  • 4 basil leaves
  • 2 mint leaves
  • 1/2 oz lime juice
  • 1-2 tsp honey (use to taste)
  • 2 oz silver rum
  • sparkling water, to top

Instructions
 

  • In a shaker, muddle the peach puree, basil, mint, lime juice, and honey until well combined. Add the rum and fill with ice. Shake until cold, then pour or strain (I like to keep the solids in the mojito so I usually just pour it outright) into your favorite cocktail glass. Top with sparkling water and garnish with fresh mint and/or basil, as desired.

Notes

*Peach puree…An alternative method to achieving the puree is by using a can of peaches. Strain and puree in your food processor or blender. You will get more than you need for this recipe, but hey, it’s great if you want to make yourself multiple mojitos!
