peach mojito

Light, bright, and sweet, a lovely porch sip for hot summer days.

Ingredients
  

  • 2 tbsp peach puree (from 1 large peach, peeled)
  • 4 basil leaves
  • 2 mint leaves
  • 1/2 oz lime juice
  • 1-2 tsp honey (use to taste)
  • 2 oz silver rum
  • sparkling water, to top

Instructions
 

  • In a shaker, muddle the peach puree, basil, mint, lime juice, and honey until well combined. Add the rum and fill with ice. Shake until cold, then pour or strain (I like to keep the solids in the mojito so I usually just pour it outright) into your favorite cocktail glass. Top with sparkling water and garnish with fresh mint and/or basil, as desired.

Notes

*Peach puree...An alternative method to achieving the puree is by using a can of peaches. Strain and puree in your food processor or blender. You will get more than you need for this recipe, but hey, it's great if you want to make yourself multiple mojitos!
