Happy Friday, peeps! I don’t know how I can emphasize springtime delight more than with this stunning and endearing cocktail. One of those recipes that conjures pure joy when I look at the photos.

And it will for you, too, once you take a sip.

Celebrate St. Patty’s upcoming and the end of the week imminent with a Lucky Charms Martini. Cereal-infused vodka, a tint of green, and white chocolate characterize our festive coupe today. A stunner as well as an apt sweet treat. Highly recommend dishing these up at your little soirees for plenty of ooh aaahs from those lucky enough to enjoy one with you.

Easy sipping and easy on the eyes. Aaaand easy to make, too!

Why So Cereal?

Get nostalgic and grab a box of Lucky Charms from the grocery shelf. Just think: any leftover you can eat for breakfast, delighting your inner 7 year old self.

First, we’re gonna infuse some whipped cream vodka. Smirnoff is the easiest to find in my experience, but if you’re having trouble for any reason you can definitely use regular or vanilla.

Scoop out some cereal and separate the green marshmallows, then dump a few of those in a jar along with the regular cereal. Pour the vodka atop and let sit for 30 minutes. The tint from the mallows will create a lovely color and the cereal will give the alcohol that flavor we need for the cocktail.

After 30 minutes, strain the vodka and discard the cereal. Do not strain the cereal and discard the vodka. That defeats the purpose here.

Now, set up your coupe glass rim. This was by far the most fun I’ve ever had decorating a cocktail glass. Use your finger or a spoon to carefully swipe marshmallow fluff all along the rim, then arrange various marshmallows over the goo. They stick perfectly to the fluff and the fluff is pretty easy to rinse off once you’re finished with your drink, if any smears remain.

To mix the drink, combine some of the infused vodka (you won’t need all of it; the amount listed will be enough for 2-3 drinks!) with white chocolate liqueur, simple syrup, heavy cream, and a drop of green dye. You can omit the dye if the green is bright enough for you, but I liked the slightly more pronounced color. Shake with ice until cold, then strain into your prettified glass and ENJOY!

I don’t know about you, but with one of these in my hand and a good book in my lap, I’d be feeling pretty lucky.

Ingredients
  

  • 1 cup Lucky Charms cereal (cereal + green marshmallows only!)
  • 1 cup whipped cream vodka
  • 1 tbsp marshmallow fluff
  • assorted Lucky Charms marshmallows
  • 2 oz white chocolate liqueur
  • 1 oz heavy whipping cream
  • 1/2 oz simple syrup (use to taste)
  • 1 drop green gel dye

Instructions
 

  • In a jar, combine the Lucky Charms cereal + green marshmallows (you don't need many!) with the vodka. Let sit at room temperature for 30 minutes until nice and green. Strain the vodka and discard the cereal. This infusion will make enough for 2-3 drinks.
  • Using a spoon on your clean finger, swipe the marshmallow fluff around the rim of a coupe glass. Attach various colors of Lucky Charms marshmallows to the fluff until the rim is covered.
  • In a shaker, combine 2 oz of the vodka, white chocolate liqueur, heavy cream, simple syrup, and dye. Add ice and shake until cold. Strain into your coupe glass and embrace your inner leprechaun. Sláinte!

Notes

*Whipped cream vodka: Regular or vanilla vodka are fine substitutes if you can’t find or don’t want to buy whipped cream vodka!
