Peter Cottontail needs a bevvy.

Longest week ever? Hello? I was off last week after my marathon, and this week was my first full return to work. My god has it dragged on! I guess any caliber of excessive anticipation, like my upcoming day off Saturday and my credit card closing so I can budget for next month, causes the clock to slow up even more than usual.

Yesterday, for National Drink Wine Day, I indulged in an Epsom salt bath and enjoyed a crisp glass of sweet rosé wine (the bottle had sheep on it!) and I think ya’ll deserve similar this Friday, too. Perhaps with a Bunny Trail Margarita as your choice chill-out sip?

This funky cocktail is flavored with fresh carrot juice, a touch of citrus, and plenty of tequila for a pleasant warmth and comfort. The coconut rim adds a delightful crunch and sweetness to your first tastes. Serve this at a Taco Tuesday dinner or for your springtime gatherings – it makes a great pitcher cocktail, too!

Hop To Your Liquor Cabinet

Nothing fancy involved here, except maybe the carrot juice. Trader Joe’s sells bottles of cold-pressed juice year round for a good price, so whenever I have a need, this is my go-to.

First, the joyful coconut rim. Brush your cocktail glass with honey, then spread some coconut flakes (toasted, sweetened, unsweetened, your choice) onto a shallow plate and dip the rim of the glass all into those goodies. Lightly shake off excess.

In your cocktail shaker, or a jar if you’re me, combine carrot juice with tequila, orange liqueur, lime juice, agave, and coconut extract. You need very little extract to achieve the flavor, so don’t huff at my 1/4 tsp and think “I DEFINITELY need more than that” because you DEFINITELY don’t.

Fill with ice and shake the drink until cold. Pour into your glass, top off with more ice if you need it, and finish with a splash of ginger beer. Sparkling water works too!

The happiest hue for the happy occasion that is the weekend. We’re in for another 30-degree-morning cold snap next week, so I’ll be enjoying this before I switch back to Peanut Butter Cup Hot Chocolate for a couple days.

Ingredients
  

  • 2 tbsp coconut flakes
  • 1 tsp honey
  • 2 oz tequila
  • 1 1/2 oz carrot juice
  • 1 oz Cointreau (orange liqueur)
  • 1/2 oz lime juice
  • 1-2 tsp agave syrup
  • 1/4 tsp coconut extract
  • ginger beer, for topping

Instructions
 

  • Brush the rim of a cocktail glass with the honey. Spread the coconut flakes onto a shallow bowl, then dip the rim of the glass into the flakes, rolling and turning to coat. Gently shake off excess.
  • In a shaker, combine the tequila, carrot juice, Cointreau, lime juice, agave, and coconut extract. Add ice and shake until cold. Pour into the prepared cocktail glass, adding more ice as needed. Top with a splash of ginger beer.
