Brush the rim of a cocktail glass with the honey. Spread the coconut flakes onto a shallow bowl, then dip the rim of the glass into the flakes, rolling and turning to coat. Gently shake off excess.
In a shaker, combine the tequila, carrot juice, Cointreau, lime juice, agave, and coconut extract. Add ice and shake until cold. Pour into the prepared cocktail glass, adding more ice as needed. Top with a splash of ginger beer.
