Hold your screams of horror and disgust, this shit is actually phenomenal.

I am not the first to make a pickle margarita, but considering it’s summer, hot as fuck, and sweets sometimes just aren’t it, I had to share my own rendition for all ya’ll loyal FMG flockmembers. Thank the jar of hot honey on my counter for the birth of our Friday cocktail. I somehow used up all of the dozen or so storage jars I own and am trying to clear some of them out during my recipe developments, because I am ashamed of how many condiments I have lying around.

Thus, our Spicy Dill Pickle Margarita. I tell you what, it shocked me how drinkable this combination proved. The briny pickle juice counterbalances the sweet tequila and liqueur, and a bit of hot honey adds a kick the drink craves as a closing act. I sipped one shortly after racing my 5k last weekend and honestly, it was a refreshing change from the stevia-infused electrolyte tabs I use daily in my water.

Not to mention, I raced a 5k, so it felt celebratory. Good a reason as any to enjoy a marg on Saturday.

Simple ingredients and a no-nonsense process. Serve up a few to friends or make a pitcher for a crowd. And tell those bitches to hold their judgments until they take a sip. I bet they, like me, will enjoy it way more than they anticipate.

Margs in a Pickle

The prep time is listed as 5 minutes because, honestly, I already had hot honey at my disposal. If you don’t, and need to make some, add another 5 minutes to your prep time. Hot honey is ridiculously easy: just combine honey, hot sauce, cayenne pepper, red pepper flakes, garlic, and onion powder in a sauce pan and heat until the granules dissolve.

Now, shake up your drink! If you’d like to start with a tajin rim, brush the side of your cocktail glass with honey and dip into a shallow bowl of the spice.

Then, in a shaker, combine tequila, dill pickle brine, lime juice, orange liqueur, and hot honey. Agitate that shit with some ice until cold, then pour into your glass. Top with a splash of sparkly water and stab a couple mini pickles on a pick to garnish.

My only note today is to be sure you bought savory dill pickles and not sweet gherkins or bread and butter pickles. No guarantee that’s gonna taste any good. The teeny dills I bought were these cuties from Target.

Sounds funky, but trust me, this drink is a shockingly refreshing summer thirst quencher.

Ingredients
  

  • tajin, for the rim
  • 2 oz tequila
  • 1 oz dill pickle brine
  • 1 oz Cointreau
  • 1/2 oz lime juice
  • 1 tbsp hot honey (use to taste, see note)
  • sparkling water, to top
  • mini dill pickles, to garnish

Instructions
 

  • If you'd like to rim your cocktail glass, do so now. Brush the rim with honey. On a shallow plate, pour 1-2 tablespoons of Tajin. Dip and roll the glass into the granules, shaking off excess.
  • In a shaker, combine the tequila, pickle brine, Cointreau, lime juice, and hot honey. Add ice and shake until cold. Pour into the prepared glass and top with sparkling water. Garnish with mini dill pickles.

Notes

*Hot honey…In a small saucepan, combine 1/2 cup honey, 1/4 cup hot sauce (I like Frank’s), 1 tsp cayenne pepper, 1/2 tsp each garlic and onion powders, and 1/2 tsp red pepper flakes. Heat for 1-2 minutes, stirring, until the granules dissolve. Store in an airtight container for up to 2 weeks at room temp, longer in the fridge.
