Thanksgiving called for the Pumpkin Cream Cold Brew White Russian (I still think that’s relevant, to be sure) and Christmas for a Peppermint Stick White Russian. The creamy cocktail is of the simplest make, with just a few key ingredients universal to the drink except this time around adorned with a chocolate-peppermint rim and infused with a bright pop of peppermint extract.

I kind of created this drink on a whim when I returned from work one Sunday and craved a sweet something-something that wasn’t necessary chewable. I typically adhere to a solidly healthy eating style during the weeks, but weekends I loosen up a bit, let my monstrous embarrasing tangle of hair down, and sometimes whip up a drink to enjoy casually on the couch or at dinner.

If you want to be more intentional, plan this for Christmas as part of your 21+ menu. Easy to acquire all of the components, and if you have even a small bar cart you might have them lying somewhere in the cabinet. I will certainly put these on the to-make list for next weekend.

The process of this cocktail is painless. Just vanilla vodka, Kahlua, and peppermint extract (a teeny amount, we all know from my narrative in the Peppermint Bark Chocolate Chunk Cookies that too much mint is a big ole issue). A heavy splash of cream smooths out the drink and heightens the addictive quality already characteristic of a good White Russian.

Sweet Rims

The fun part of the bev is the chocolate rim. I would not skimp on this. It looks pretty and lively and gives you something to enjoy while lamenting the bottom of the glass. The rim might be my favorite part since chocolate + peppermint = heart eyes.

I melt more chocolate than I know I’ll need to ensure I don’t wind up with a half naked glass rim, so if you have more cocktails to make this is a perfect overdose. Otherwise, make some Slice &and Bake Brown Butter Candied Pecan Cookies, melt some more chocolate, and dip the finished cookies.

Then, crush some peppermint candies or mini candycanes. I find the latter easiest. Place the canes in a bag, remove the air, seal tightly. Then, hammer gently but firmly with a rolling pin or a meat mallet until you get fine crumbs.

Easy peasy.

Sweet chocolate rim dipped in crumbled peppermint adorns this lovely, simple nightcap perfect for Christmas evening.

Ingredients
  

  • 1/4 cup dark chocolate chips, melted
  • 1/4 cup crushed peppermint candies
  • 2 oz vanilla vodka
  • 2 oz Kahlua
  • 2-3 drops peppermint extract
  • 1-2 oz heavy cream

Instructions
 

  • Melt the chocolate chips in a shallow bowl. Place the crushed peppermint candies in another. Dip the rim of a cocktail glass first in the chocolate, then twist and roll into the candies.
  • In a shaker, combine the vanilla vodka, Kahlua, and peppermint extract. Add ice and shake until cold. Pour into the rimmed cocktail glass and top with desired amount of heavy cream. Serve with a peppermint stick.

Notes

*Any leftover melted chocolate and candy canes can be used for additional cocktails.
*To crush the peppermint candies: Place the candies in a ziptop bag and squeeze all of the air from the bag. Seal tightly. Pat firmly with a meat mallet or a rolling pin until the candies are crumbled into small bits.
