I done bought a hell of a lot of pumpkin butter and I’m using it in e v e r y t h i n g.

Woo, big thunder boom. A storm popped up randomly this afternoon and I’m watching the rain tumble onto our drive. I thankfully had the instinct to go out for my stroll and grocery run a short while before the clouds really blew in. So now, I’m cozy inside with my coffee and a couple little cookies to keep me company at my computer.

We haven’t a tendril of cool air in our forecast upcoming, but if you do, turn to this Harvest Pumpkin Margarita as your weekend drinky drink. I’m into the idea of chilling on the couch, mindlessly listening to the drone of college football in the background, sipping on a spicy sweet fall cocktail. Pumpkin butter and apple cider up the ante on this delightful drink.

Super quick to mix, and a surefire crowd pleaser if you’re hosting a few friends for whatever occasion may arise.

Pumpkin Butter Cider Time

Man, it’s so befitting that the weather is so gloomy while I’ll type up this post. Lulls me into a comfy mood, it does. Hopefully I won’t fall asleep and bang my head on the laptop.

The flavorings of this cocktail, as I hinted above, are apple cider and pumpkin butter. Use your favorite brand of either, or make your own (I plan to share my own formula for spiced cider soon!). Otherwise, your ingredients are quite typical for a margarita.

First, a cinni sugar rim. Optional, but lovely. Combine some cinnamon and sugar, run a lime wedge around the rim of your cocktail glass, and dip into the cinnamon sugar to coat. Make it as thick or thin as you want. No rules.

I like a shaker for this cocktail, rather than a simple stir, since the pumpkin butter has some substance and needs a little more urging to mix into the liquids. In your shaker, mix up the pumpkin butter, cider, tequila, lime juice, orange liqueur, and a touch of agave if you want a bit more sweetness. I don’t usually need agave, but if you have a stronger sweet tooth, go for it.

Shimmy-shake your sip with ice, pour into your prepared glass, and garnish with some apples, cinnamon stick, and a star anise pod. Perfection in a glass.

Best enjoyed sipped slowly, maybe with some Layered Street Corn Dip, a plate of Pumpkin Butter Oatmeal Chocolate Chip Cookies, and a Pumpkin Pretzel or two? Sounds like a swell gameday spread to me!

Welcome in the reign of the Pumpkin King by sipping down this cozy, sweet tequila cocktail.

Ingredients
  

  • 2 tbsp sugar
  • 1 tsp cinnamon
  • 2 tbsp pumpkin butter
  • 2 oz tequila
  • 2 oz apple cider
  • 1/2-1 oz agave (optional)
  • 1/2 oz Cointreau (orange liqueur)
  • 1/2 oz lime juice
  • 1/2 apple, sliced
  • cinnamon stick and star anise, for garnish

Instructions
 

  • Toss the sugar and cinnamon together on a shallow plate. Run a lime wedge around the rim of a cocktail glass. Dip and swirl the rim into the cinnamon sugar. Shake off excess.
  • In a shaker, combine the pumpkin butter, tequila, apple cider, agave (if using), Cointreau, and lime juice. Fill with ice and shake until cold.
  • Pour into the prepared cocktail glass. Garnish with apple slices, cinnamon stick, and star anise, as desired.
