Listen, I only named this the Single Lady mug cake because a) I wanted to troll you and get Beyonce stuck in your head, and b) it sounded catchy. Man, woman, nonbinary, whatever your identity is – this solo mug cake will rock your sweet tooth to satisfaction.

A second easy treat to consider for Valentine’s Day, alongside the 5 Ingredient Vegan Chocolate Mousse from Wednesday. Molten chocolate cake is the shit diggity, and this version is far quicker, needs no oven, and includes a big hunk of sweet caramel sauce for a seriously decadent dessert.

No need for me to babble much here. Let’s nosh on some chocolate.

Mug Shot

I chose melted coconut oil as my fat content for this recipe. You can use butter if you’d like as well. Ensure your mug is large enough to contain this cake – it’s no tiny offering, yo, it’s a substantial serving worthy of the king/queen/emperor/empress you are.

With the oil in the mug, whisk in egg, milk, vanilla extract, and maple syrup or honey. I am satisfied with just 2 tablespoons of sweetener, but you can use a bit more if you have a stronger saccharine craving.

Then, fold in flour, cocoa powder, baking powder, and a bit of salt. Stir in a good heap of chocolate chips, then drop a couple spoonfuls of caramel sauce straight in the center.

Microwave the cake for 1 minute 45 seconds to 2 minutes. The longer you heat the cake, the less molten and more set, which is fully delicious. I like me a melty center, though.

To serve, scoop up a big hunk of vanilla ice cream and drizzle extra caramel sauce. Do as much as you want, you dog. No rules with mug cake. Eat it warm straight from the bakery (ahem, microwave). I swear, the softened cake via ice cream dribbling into each crevice is otherworldly, craveable, delectable, a religious rite.

Ingredients
  

  • 1 tbsp coconut oil, melted
  • 1 egg
  • 3 tbsp milk of choice
  • 1/4 tsp vanilla extract
  • 2-3 tbsp maple syrup or honey, to taste
  • 3 tbsp all purpose flour
  • 3 tbsp cocoa powder
  • 1/4 tsp baking powder
  • pinch kosher salt
  • 2 tbsp caramel sauce, homemade or store bought
  • 2 tbsp dark chocolate chunks
  • vanilla ice cream and caramel sauce, to serve

Instructions
 

  • In an 8-10 ounce microwave-safe mug, whisk together the coconut oil, egg, milk, vanilla, and maple syrup. Fold in the flour, cocoa powder, baking powder, and salt. Mix in the chocolate chips, then drop the caramel sauce into the center of the batter.
  • Microwave the mug cake for 1 minute 45 seconds to 2 minutes. The longer you "bake" the cake, the more set it will be. Serve warm topped with ice cream and caramel sauce.
