spicy serrano peach paloma

Ingredients
  

  • 1 can peaches in water, drained
  • 4 basil leaves
  • 1/2 oz lime juice
  • 1 tsp honey or agave (use to taste)
  • 2 oz tequila
  • 3 oz grapefruit juice
  • 1 serrano, sliced
  • peach sparking water, to top
  • peach slices, for garnish

Instructions
 

  • Pour the peaches into a food processor or high speed blender and blitz until smooth. You will not need all of the puree for this recipe; leftovers will keep in the fridge, sealed, for up to a week.
  • In a shaker, muddle 2 oz peach puree with the basil leaves, lime juice, and honey or agave. Add the tequila, grapefruit juice, and serrano pepper. Fill with ice and shake until cold.
  • Strain the drink into a cocktail glass filled with ice. Top with a big splash of the sparkling water. Garnish with peach slices and extra basil, as desired!

Notes

*Lime sugar rim: Brush the rim of your cocktail glass with honey. This method works MUCH better than citrus juice. On a shallow plate, toss 1 tablespoon of coarse sugar with 1 tsp lime zest. Dip and swirl the rim of the glass into the sugar, shaking off excess.
