In a small saucepan, combine the sugar, 1/2 cup of water, and the strawberries. Simmer, stirring and mashing the berries occasionally, for 10-15 minutes until the liquid turns a lovely red hue. Strain the syrup from the solids into a bowl or jar. Leftover syrup keeps for up to 2 weeks in the fridge.
Melt the white chocolate chips in a shallow microwave-safe bowl for 1 minute. Stir, then heat an additional 20-30 seconds until fully melted. Dip and swirl the rim of your favorite coupe glass into the white chocolate, letting excess drip back into the bowl.
In a shaker, combine the vodka, 1 oz syrup, the white chocolate liqueur, the heavy cream, and the dye (if using). Fill with ice and shake until cold. Strain into the prepared cocktail glass and garnish with a fresh strawberry slice!
