Ingredients
  

  • 1/2 cup vegetable oil
  • 3/4 cup dark brown sugar
  • 2 large eggs, at room temperature
  • 2 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1/2 cup creamy peanut butter
  • 1 1/2 cups all purpose flour
  • 2 tsp cinnamon
  • 1 tsp ginger
  • 1/2 tsp ground cloves
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 1 cup chocolate chips or chunks, plus more for topping

Instructions
 

  • Preheat oven to 350 degrees. Grease a 9 x 5 inch loaf pan with oil or butter.
  • In a bowl, beat the oil and sugar until combined. Beat in the eggs, one at a time, then the vanilla, pumpkin puree, and peanut butter. Add the flour, baking powder, baking soda, cinnamon, ginger, cloves, and salt. Fold in the chocolate chips. Do not overmix.
  • Transfer batter to the prepared loaf pan, smoothing it as evenly as possible. Sprinkle additional chocolate chips/chunks atop. Bake for 50-60 minutes until the center is set and an inserted toothpick or skewer emerges with just a few moist crumbs.
  • Let cool 20 minutes in the pan, then invert onto a wire rack. Flip upright. Cool at least 30 minutes, then slice and enjoy!

Notes

*Peanut butter: I recommend a no-stir variety for this recipe ("natural" is still okay).
