Spooky how good these are.

Total Time 2 hours hrs 10 minutes mins
- 2 sticks butter, softened
- 3/4 cup dark brown sugar
- 1/3 cup sugar
- 2 large eggs, at room temperature
- 2 tsp vanilla extract
- 2 cups all purpose flour
- 1/2 cup cocoa powder
- 1 tbsp black cocoa powder (or more regular cocoa)
- 1 tsp baking soda
- 1/2 tsp kosher salt
- 1 cup white chocolate chips or chopped white chocolate
- candy eyes, for decorating
Preheat oven to 350 degrees. Line a 9 x 13 inch cake pan with parchment, leaving some to overhang the sides.
In a bowl, cream the butter, brown sugar, and regular sugar until fluffy, about 2-3 minutes. Whip in the eggs, one at a time, then the vanilla. Add the flour, cocoa powder, black cocoa (if using), baking soda, and salt. Mix until just combined.
Press the cookie dough evenly into the cake pan. Bake for 25-28 minutes until the edges darken and the center is set. A toothpick should emerge with just a few moist crumbs when poked into the center. Cool the pan on a wire rack for 15 minutes, then transfer to the fridge and chill for at least 1 hour.
When the cookies are chilled, heat the white chocolate in a microwave safe bowl on high power for 1 minute. Stir, and heat 20-30 seconds longer to completely melt.
Place a piece of parchment or a paper towel beneath a wire rack. Slice the chilled cookie slab into 16 bars. Drizzle white chocolate over each cookie in a criss cross or diagonal line pattern. I attached a small round piping tip to a piping back to achieve a relatively even finish, but you can drizzle with a spoon or knife if that's easier. Attach two (or more! Get goofy!) candy eyes to the cookie. Repeat with the remaining bars.
Let the white chocolate set for about 10 minutes, then ENJOY!
