- 1/2 cup strawberries, sliced
- 1 cup sugar
- 1 cup mango chunks (about 2 medium mangoes)
- 1 1/2 cups fresh lemon juice (about 10-12 large lemons)
- 7-8 cups water
In a small saucepan, bring to a simmer the strawberries, sugar, and 1 cup of water. Cook gently, stirring and mashing the berries occasionally, about 10-15 minutes until the berries are greatly reduced. Strain the solids through a fine mesh sieve into a jar or measuring glass.
Toss the cubed mango into a food processor and blitz until smooth, scraping down the sides of the bowl as needed.
In a large drink pitcher, stir together the strawberry syrup, mango puree, lemon juice, and water. Cover and chill at least one hour, but preferably overnight.
Serve with fresh strawberry slices, basil, and/or mint leaves!
